This recipe was different and interesting to make. I didn’t know if milo would like it or not because he had never eaten artichoke hearts before and I didn’t know if I would like making it because I had never cooked grits before, but I figured I would give it a shot! The results were fantastic! It was really quick to make and was an easy clean up which I always love… I also think Milo shared in my enthusiasm considering the licked clean bowl and happy puppy staring up at me:)
Here is what you’ll need…(This makes 4 servings for a 50 pound dog)
- 1 cup uncooked grits
- 1 lb ground beef
- 8 ounces canned unseasoned artichoke hearts, drained and chopped
- 1/2 cup shredded part-skim mozzarella cheese
Step 1: Preheat the oven to 450 degrees fahrenheit. Coat a pizza stone or baking sheet with nonstick cooking spray.
Step 2: Prepare the grits according to the package direction. Set them aside to cool for about 20 minutes. You should have about 2 cups of cooked grits.
Step 3: Using a spatula, evenly spread the cooked grits onto the greased pizza stone or baking sheet. Evenly spread the beef on top of the grits to make the second layer. Next, add the artichoke hearts, and top with the cheese.
Step 4: Bake the pizza for 10 to 12 minutes, until the meat is browned. Remove from the oven and let it cool for 30 minutes.
Step 5: Chop the pizza into bite size pieces. Let completely cool before serving. Refrigerate in an airtight container up to 3 days or freeze up to 3 months.
