This recipe is easy to make but takes some time to cook! Make sure you carve out enough time in your day if you choose to make this. The good thing about this recipe is you can make a really big batch and freeze it for the upcoming months. Milo absolutely LOVES this stew! His nose instantly goes into the air in search of the delicious smell every time I take it out of the fridge.
Here is what you’ll need…(This makes 4 servings for a 50 pound dog)
- 2 tbs butter
- 2 1/2 lbs boneless beef chuck
- 10 small red potatoes quartered
- 1 lb peeled, cubed, butternut squash
- 1 quart unsalted beef broth
- 1 cup mashed banana
- 3 tbs cornstarch
Step 1: In a large pan, melt butter over medium- low heat. Add beef and cook until browned. Remove meat from pan and set aside.
Step 2: In same pan, add potatoes and squash, sauté for 5 minutes.
Step 3: In large stock pot, combine meat, squash, potato, broth, and banana. Cook over medium heat covered, for 20 minutes.
Step 4: In separate bowl, mix cornstarch with 1 tbs of water and stir until smooth. Add cornstarch to pot and stir slowly for 2 minutes to incorporate.
Step 5: Cover pot and cook stew for 25 minutes. Let it completely cool before serving.
